
Team PSFK had an interesting experience in London Gastropub The Eagle last week. When we miscounted the number of napkins (or serviettes) and asked for another the waitress asked us why we wanted it. Turns out that they don’t just hand them out on request – it’s part of the pub’s policy to keep an eye on the number customers use in order to reduce as much waste as possible.
Hmmm… an interesting concept: making customers as responsible for a brand’s environmental footprint as the brand itself.

Restaurants could offer cloth napkins as part of a membership. When customers bring in their napkins they get a percentage off of the meal. (Though… customers might not be keen on carting home their dirty napkins.)
