We were intrigued by this group of stickers inside the front window of a restaurant in SOHO in New York yesterday. It was interesting to see Green Eating and Slow Food stickers displayed on such equal terms with the traditional Michelin Guide Recommended label.
Given the growing focus on green living, it seems that a new standard in fine dining is emerging that will include eco-friendly elements as integral components. Putting together exceptional cuisine is no longer only going to be about taste and ambience — it is also going to be about how sustainable you and your suppliers are.

It would be interesting if sustainability and local food became considerations for the Michelin rating itself…
