Gizmodo points us to Delta’s innovative Touch Sensitive Faucet, and they report that the touch sensitivity works just right. Water flow is turned on and temperature is controlled with a standard handle, but touching anywhere on the surface of the faucet will stop or turn on the water flow. Pulling the spray nozzle down de-activates it so that it won’t be accidentally turned on.

My complaint with this is that likely it, like all of those motion activate faucets, toilet flushes, and paper towel dispensers, relies on batteries to power itself.
