Will sous vide cookers be the slow-cookers of the 2010s? Only time will tell but Zé Pinto Ferreira, founder of Mellow, a new app-enabled sous vide cooker, wants people to make sous vide as they would slow-cook – plopping food in the appliance and letting the machine do all the work.
Thanks to culinary shows like Hell’s Kitchen, Top Chef and MasterChef, sous vide – a method of cooking food in a bag submerged in water – has entered our cultural culinary consciousness. But for home cooks, sous vide is still a challenge because of the precision needed for water temperature and cooking times. Mellow eliminates these difficulties with its app and innovative features.
Users can add a bag of food to the water bath, then set a timer through the app, detailing what food it is, how cooked they want it and even schedule from afar when to start cooking. Mellow then determines the precise temperature and cook time needed. Should they be running late, a quick alert to the app will cause Mellow to change cooking time. The machine also has a refrigeration element to keep food fresh before it is cooked.
While there are other home sous vide machines on the market, Mellow differentiates itself with its intelligence – learning users habits and making smart recommendations. Who knows? Mellow could be the next wave in already on-going home cook foodie revolution.
