Most of the beef sold in supermarkets comes from grain-fed cows, but there is a movement to bring more grass-fed beef to diners’ tables. Grass-fed beef tastes different, but it is the food that cows naturally eat, thus many argue it is better for their, and our health. The problem is many chefs don’t know how to cook with the unique flavor of heritage beef, and tend to shy away from it. Beefopedia is a web-based portal that provides information about grass-fed beef in an effort to encourage the use of the more natural product.
